From the SwimSwam Mother’s Day Recipe File – Let’s Get Cooking!

You’re hungry. That goes without saying (you are a swimmer, after all).

Mother’s Day is tomorrow. You’ve been procrastinating….

How do we solve the two problems at the same time? Here are a few SwimSwam mothers’ recipes that you could make for your own mother … with plenty to go around so you get fed as well.

 

My Mother’s Brownies (I always double the recipe!)

Sift:

  • 2 cups sugar

Melt, then cool:

  • 4 oz chocolate
  • ½ cup butter

Beat until light:

  • 4 eggs
  • ¼ teaspoon salt

Add the sifted sugar gradually. Continue to beat until these ingredients are light and creamy. Fold in the melted mixture and:

  • 1 teaspoon vanilla

Sift and add:

  • 1 cup all-purpose flour

Beat the batter until it is just smooth. Fold in:

  • 1 cup nut meats

Grease and flour a 9×13-inch pan. Pour in the batter. Bake in a moderate oven 325° for about 30 minutes. When it is cold cut into oblongs or squares.

 

My Mother-in-Law’s Crêpes

  • 250g flour (about 2 cups)
  • Pinch of salt
  • Tablespoon of olive oil
  • 4 eggs

Mix together, then add

  • ½ liter milk (2.1 cups)

You can then fill the crêpes with jam, Nutella, sugar, or whatever you fancy.
